Ingredients

For the Filling :

  • 6 fresh peaches , peeled and sliced (or 2 cans of peaches, drained)
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • 2 teaspoons lemon juice
  • 2 tablespoons cornstarch (for thickening)

For the Topping :

  • 1 cup all-purpose flour
  • ¼ cup granulated sugar
  • ¼ cup brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 6 tablespoons unsalted butter , chilled and cut into small cubes
  • ¼ cup boiling water

Optional Topping :

  • 1 tablespoon sugar + ½ teaspoon ground cinnamon (for sprinkling)

Directions

Step 1: Preheat the Oven
  1. Preheat your oven to 375°F (190°C) .

Step 2: Prepare the Peach Filling
  1. In a large bowl, mix the sliced peaches with granulated sugar , brown sugar , cinnamon , nutmeg , vanilla extract , lemon juice , and cornstarch .
  2. Toss until the peaches are well coated and evenly distributed.
    • Tip : If using canned peaches, drain them well to prevent excess liquid in the filling.

Step 3: Assemble the Filling
  1. Pour the peach mixture into a 9×13 inch baking dish and spread it evenly across the bottom.

Step 4: Make the Topping
  1. In a separate bowl, combine the flour , granulated sugar , brown sugar , baking powder , and salt .
  2. Add the chilled butter cubes and cut them into the dry ingredients using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  3. Stir in the boiling water just until the dough comes together—it will be slightly sticky.

Step 5: Add the Topping
  1. Drop spoonfuls of the topping over the peaches, spreading it gently but not completely covering the filling—it’s okay if the filling peeks through.
  2. If desired, mix the optional cinnamon-sugar and sprinkle it evenly over the topping for extra sweetness and crunch.

Step 6: Bake
  1. Bake in the preheated oven for 40–45 minutes , or until the topping is golden brown and the peach filling is bubbling around the edges.
    • Tip : Place a baking sheet under the dish to catch any drips from the bubbling filling.

Step 7: Cool and Serve
  1. Let the cobbler cool slightly before serving.
  2. Serve warm, ideally with a scoop of vanilla ice cream or a dollop of whipped cream , for an indulgent finish.

Tips for Success

  • Use ripe peaches : Fresh, ripe peaches yield the best flavor, but canned peaches work well in a pinch.
  • Adjust sweetness : Taste the peach mixture before baking and adjust the sugar if needed, especially if your peaches are tart.
  • Make it gluten-free : Substitute the all-purpose flour with a gluten-free flour blend for the topping.
  • Double the batch : This recipe can easily be doubled for larger gatherings—just use a bigger baking dish.

Serving Suggestions

  • Garnish with a dusting of powdered sugar for a decorative touch.
  • Pair with a cold glass of milk or a hot cup of coffee for a cozy dessert experience.

Enjoy this Peach Cobbler —a timeless dessert that’s sweet, gooey, and utterly irresistible!
