Ingredients

For the Cake:

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 2 eggs
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 – 20 oz can of crushed pineapple (undrained) (in its own juice, not syrup)
  • 1 cup chopped nuts (optional)

For the Cream Cheese Frosting:

  • ½ cup butter (1 stick), softened
  • 1 – 8 oz package cream cheese, softened
  • 1 tsp vanilla extract
  • 1 ½ cups confectioners’ sugar
  • Coconut for garnish (optional)

Oven Temperature: Preheat to 350°F (175°C) .

Instructions

Step 1: Prepare the Cake Batter
  1. In a large mixing bowl, combine the flour , sugar , eggs , baking soda , vanilla extract , and pinch of salt .
  2. Add the crushed pineapple (undrained) to the bowl and mix everything together until well combined.
    • Tip : The juice from the pineapple helps keep the cake moist, so don’t drain it!
  3. If desired, fold in the chopped nuts for added texture and flavor.

Step 2: Bake the Cake
  1. Grease a 9×13-inch baking pan and pour the batter into it, spreading it evenly.
  2. Bake in the preheated oven at 350°F (175°C) for 35–40 minutes , or until the top is golden brown and a toothpick inserted into the center comes out clean.

Step 3: Make the Cream Cheese Frosting
  1. In a mixing bowl, beat the butter , cream cheese , and vanilla extract together until smooth and creamy.
  2. Gradually add the confectioners’ sugar , mixing on low speed at first to avoid a sugar cloud, then increasing the speed until the frosting is light and fluffy.

Step 4: Frost the Cake
  1. Once the cake has finished baking, allow it to cool slightly but frost it while still warm. This helps the frosting melt slightly into the cake for an extra decadent finish.
  2. Spread the cream cheese frosting evenly over the top of the cake.
  3. If desired, sprinkle chopped nuts or coconut flakes on top for garnish.

Tips for Success

  • Use fresh pineapple : If you prefer, substitute the canned pineapple with fresh crushed pineapple (about 2 cups). Be sure to include the juice for moisture.
  • Add tropical flair : Toasted coconut or maraschino cherries make a great garnish for a Hawaiian twist.
  • Make ahead : This cake tastes even better the next day as the flavors meld together. Store it in the refrigerator, covered, for up to 3 days.
