Cook Time: 20 minutes

Ingredients:

For the Cheeseburger Bombs:

  • 1 lb ground beef (80/20 blend for juiciness)
  • 1/2 cup shredded cheddar cheese (or your favorite melting cheese)
  • 1/4 cup grated Parmesan cheese , divided
  • 2 cloves garlic , minced
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup breadcrumbs
  • 1 large egg , beaten
  • 1 tbsp olive oil (optional, for brushing)

For Topping:

  • 2 tbsp melted butter
  • 1 tsp garlic powder
  • 1/4 cup grated Parmesan cheese
  • Chopped fresh parsley , for garnish

Instructions:

Step 1: Preheat and Prepare

  1. Preheat your oven to 400°F (200°C) . Line a baking sheet with parchment paper or lightly grease it.

Step 2: Make the Beef Mixture

  1. In a large mixing bowl, combine the ground beef, half of the grated Parmesan cheese, minced garlic, garlic powder, onion powder, salt, black pepper, breadcrumbs, and beaten egg.
  2. Mix gently with your hands or a spatula until just combined. Avoid overmixing to keep the meat tender.

Step 3: Shape the Bombs

  1. Divide the beef mixture into 20-24 equal portions (about 1 tablespoon each) and flatten each portion into a small patty.
  2. Place a small pinch of shredded cheddar cheese in the center of each patty.
  3. Carefully wrap the beef around the cheese, sealing it completely to form a ball. Roll the ball gently between your palms to smooth it out.
  4. Place the shaped bombs on the prepared baking sheet, spacing them about 1 inch apart.

Step 4: Add the Garlic Parmesan Coating

  1. In a small bowl, mix together the remaining grated Parmesan cheese and garlic powder.
  2. Lightly brush the tops of the bombs with olive oil (optional), then sprinkle the Parmesan-garlic mixture evenly over each bomb.

Step 5: Bake the Bombs

  1. Bake in the preheated oven for 18-20 minutes , or until the bombs are cooked through and golden brown on top. The internal temperature should reach 160°F (71°C) .
  2. During the last 2 minutes of baking, brush the tops of the bombs with melted butter for extra richness.

Step 6: Garnish and Serve

  1. Remove the bombs from the oven and let them rest for 2-3 minutes.
  2. Sprinkle with chopped fresh parsley for a pop of color and freshness.
  3. Serve warm with ketchup, ranch dressing, or your favorite dipping sauce.

Tips for Success:

  • Cheese options: Swap cheddar for mozzarella, pepper jack, or even blue cheese for a different flavor profile.
  • Add-ins: Mix finely chopped onions, jalapeños, or bacon bits into the beef mixture for extra flavor.
  • Make ahead: Assemble the bombs ahead of time, cover, and refrigerate for up to 24 hours before baking. You can also freeze them for longer storage.
  • Air fryer option: Cook the bombs in an air fryer at 375°F (190°C) for 8-10 minutes , flipping halfway through, until golden and cooked through.
