Ingredients:

  • 2 1/2 cups all-purpose flour (divided, plus more for dusting)
  • 1/4 cup granulated sugar
  • 1/4 tsp salt
  • 2 1/4 tsp instant yeast (1 packet = 7 grams)
  • 2/3 cup warm milk (110°F, microwave for 35 seconds if needed)
  • 4 tbsp unsalted butter (melted, divided)
  • 2 egg yolks
  • 1/2 tsp vanilla extract
  • 1/3 cup jelly or jam (without large fruit pieces)
  • 1/3 cup granulated sugar (for rolling the donuts)

Instructions:

Step 1: Prepare the Dough

  1. In a large mixing bowl, whisk together 1 cup of flour , 1/4 cup sugar , yeast, and salt.
  2. Add the warm milk, 3 tbsp melted butter , egg yolks, and vanilla extract. Whisk until smooth and well combined.
  3. Cover the bowl with a clean kitchen towel or plastic wrap and let it rest at room temperature for 10 minutes , or until bubbles form on the surface.

Step 2: Knead the Dough

  1. Add the remaining flour to the bowl and knead the dough in the bowl for 5 minutes , until it becomes smooth and elastic.
  2. Lightly grease the bowl with a small amount of oil or butter, place the dough back in the bowl, and cover it again.
  3. Let the dough rise in a warm place until doubled in size. This will take about 45 minutes in a 100°F oven or 1 1/2 hours at room temperature .

Step 3: Shape the Donuts

  1. Preheat your oven to 375°F (190°C) . Line a baking sheet with parchment paper.
  2. Lightly flour your work surface and roll out the dough to 1/2-inch thickness .
  3. Use a 2 1/2-inch round cutter to cut out circles from the dough. Re-roll scraps as needed to use up all the dough.
